Ingredients:
- 2 ripe bananas, mashed
- 1 ½ cups whole wheat flour
- 1 tsp baking soda
- ½ tsp cinnamon

- ¼ cup maple syrup or honey
- 1 egg (or flax egg for vegan option)
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350°F and line a muffin tin with liners.
- In a bowl, mix mashed bananas, SólDate™, maple syrup, egg, coconut oil and vanilla.
- In another bowl, whisk flour, baking soda and cinnamon.
- Gently combine wet and dry ingredients, then pour into muffin cups.
- Bake for 18–20 minutes until golden brown. Let cool and enjoy!
